The Swamp Mayhaw tree flowers in March, however, the mayhaw berries most often ripen in early May. The Swamp Mayhaw Tree is a heavy bearer and can be used to prepare delicious mayhaw jellies and jams. It is not unusual to harvest 20 gallons of mayhaws from a single tree after the berries have matured. During the month of May the mayhaws begin to turn brilliant red that is a sign that the mayhaws are ready for harvesting. The mayhaw berry can be kept fresh even without refrigeration for several days after harvesting. Many orchard owners prefer to havest mayhaw fruit easily by spreading sheets of plastic underneath the trees and shaking the mayhaws off the trees. The Swamp mayhaw tree thrives in swampy areas or upland dry gardens.
