Saijo Persimmon This Japanese persimmon is smaller than most other cultivars and bright orange in color, and grows to, about one-half the size of a Fuyu persimmon, the most popular persimmon tree cultivar. The shape of the Saijo persimmon is oval and drooping with a brown knob tapering at the base of the fruit. The Saijo persimmon tree is cold hardy to USDA climate zone 6 and ranks as the most cold hardy of all the early imported Japanese persimmons introductions into the United States. The Saijo persimmon grows in large clusters like grapes, and when this astringent persimmon changes in color from bright orange to a burgundy color, it is delicious to eat, and that ripening point is the best time to pick it from the tree.
