The Persian Lime, Citrus latifolia Tan, also called the Tahiti lime. The Persian Lime tree is believed to be a hybrid lime, because the pollen is not viable, and thus, there are no seed, but the lime fruit is extremely juicy and sour. The peel of the Persian Lime is then and dark vivid green, but as the ripening proceeds the thin peel of the lime changes to a light yellow color. The Persian Lime is the most cold hardy lime and is grown on a huge scale in Florida since about 1920, where its juice is evaporated industrially to form a lime concentrate that is used to flavor candy, drinks, jelly, etc. The Bearss Lime tree is one of the numerous cultivars of the Persian Lime, Citrus latifolia and Florida produces 6500 acres of the Persian Lime tree cultivar that is squeezed into canned fresh lime juice that is marketed for 90% of the National market by Florida. Many delicious desserts can be made from fresh Persian limes, commonly substituted in the world famous key lime pie. Limes are also used extensively in Limeade, a lime drink, and a chilled slice of lime accents the flavor of many beers.
