Elberta peaches ripen Late July through August and need 800 chill hours (5 weeks of 45 degrees F or below) to set fruit. Planting a different variety near the Elberta will help increase the pollen available during flowering and help increase the fruit quality, but other varieties are not needed to produce peaches. This red peach is one of the most famous peaches in the United States. Hardy, disease resistant fruits of are large and freestone, colored deep golden yellow, blushed a deep red. The Elberta peach, when tree ripened, can be as large as a coffee cup. Peaches can be dried, preserved or made into jelly for consumption months after the initial harvest. The flowering of an Elberta Peach tree can begin in early March after a winter warmup.
