The olive oil produced from pressing Arbequina olives is of a high quality and a fruity musky flavor but rather unstable with a short shelf life in some cases. The olives are small on the Arbequina Olive Tree, but the trees begin bearing early and are planted much denser to gain more cold tolerance, which is about 22 degrees F.
